The Meat Congress addressed issues of functional nutrition
The 14th edition of the International Meat Congress took place within the conference programme of Agroprodmash 2024. The event was organised by Gorbatov Federal Research Center for Food Systems of the Russian Academy of Sciences, and EXPOCENTRE AO. This year’s main topic is Special and Functional Nutrition: Trends, Solutions, Image.
The congress was moderated by Andrey Dydykin, Head at the Special and Functional Nutrition Department of Gorbatov Federal Research Center for Food Systems.
Functional nutrition has played a special role in the food industry in recent years. The main objective of functional nutrition is a favourable effect on the human body using products of natural origin. Functional nutrition products are a special group that do not belong to the category of medicines and therapeutic foods, although they are used to improve the functioning of body systems and enhance human health. Therefore, they occupy an intermediate place between ordinary products made according to traditional technology and products of therapeutic nutrition.
There were several reports on the topics of functional products from super expectations to reality, priority features of food products for health saving: distinctive features and conformity assessment, current scientific approaches to the development of special and functional meat-based products, digitalisation and software in the production of meat, fish and dairy products with a case study of sausages for baby food, sustainable development of meat processing enterprises making special products through the lens of sustainable quality, and others.
